Director's Note

Twenty years ago, Greg Bortz dreamed of a small corner bakery where he could make his loaves for the people of the Highland neighborhood. At the corner of the gourmet ghetto, Greg opened the doors to The Denver Bread Company.

What inspires a person to start working at 2am in the morning? Many things, but chief among them is a passion for the craft. His corner bakery has allowed those who enter to taste the beautiful hearth baked loaves, while inspiring future generations of bakers. 

 

Most bakeries have sophisticated equipment, or at least a thermometer, to track the progress of the live dough. However, Bortz has none of those advancements, and has built his bakery from the ground up. Combining flour, water, salt, and yeast, Greg’s hands shape soft pillows of dough into crusty loaves of bread.
